Creamy Avocado Dressing

I like homemade salad dressings because you get to control the amount of sweet, heat, or spice to your liking. But I also like them because you can keep it simple, without all the corn syrup and ingredients you can’t pronounce, let alone identify in a food line-up (and therefore should not be put into your body.

I often opt for a great vinaigrette or just a squeeze of lemon and dash of olive oil but on those days when I want something a bit more decadently toothsome, I whip up one of a handful of creamy go-to dressings. This one features avocado, so it’s creamy, chock full of good-for-you-fat and guilt-free. It’s also really delish on your favorite taco salad.

Quick & Creamy Mexicado Dressing

  • 1 large ripe avocado
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1Tbsp fresh lime juice
  • 1/2 cup whole greek yogurt
  • 1 tsp cumin
  • Small handful of fresh cilantro leaves
  • 1/2 tsp salt

If you like heat in your dressing, try adding 1 tsp Sriracha (optional) to spice things up a bit.

Scoop avocado from its shell, removing the seed, and drop into blender or food processor. Add the rest of the ingredients and blend until smooth and pourable, taste and adjust seasoning to your liking. Serve on your favorite salad and enjoy! Also, tasty on burritos and tacos.
