Hey ya! Groovy Readers;
I’ve missed you all. After a horrific month of ridiculous medical issues for the whole fam (my sweet toddler even had pneumonia!) and a very messy transfer from WP.com to fully hosted (My top links got hacked and I lost a ton of READERS due to rerouting issues!! YIKES!!!) I am now back on track and so is the blog.
I hope you haven’t forsaken me.
So to kick things off in style, I have a giveaway in appreciation of all of you that have stuck by me and continued to check back for new posts.

In fact, he is so committed to getting you to LOVE real food the way he does that he opens the book with a chapter titled, Food You Thought You Hated. It’s everything you’d expect from the man who uttered, “Man, bacon is my jam!”

My favorite Southern recipe would (hands down) have to be, CHESS PIE ! Your Uncle and I were on a 7 week road trip in 2010 and while in Tennessee we stopped into a bakery (I love to look at all the breads and pastries), OK..and buy them too ! 🙂
The staff was so friendly, warm & helpful. We were given a sample of “Chess Pie”. It is super rich and delicious! Very similar to Pecan Pie without the pecans ! We immediately fell in love with it, and I could not wait to get home and scan the net for a recipe! I found many, and found one to be a very good match.
History says it originated in the South and a couple explanations &/or (folklore) on it’s name are:
The origin of the name, Chess Pie, is uncertain, but there are plenty of guesses and a bit of folklore surrounding the name. The most probable explanation is that since the English lemon curd pie filling is very close to lemon chess pie, and they believe the word “chess” is an Americanization of the English word “cheese,” referring to curd pie. Basically the Chess Pie is a cheese-less cheesecake.
One explanation suggests that the word is “chest,” pronounced with a drawl and used to describe these pies baked with so much sugar they could be stored in a pie chest rather than refrigerated.

My go to comfort food is homemade Macaroni and Cheese! I actually made some tonight and the leftovers are going to be made into in a Mac and Cheese PIZZA. I’ve never made that kind of pizza but I think the kids will like it.

My favorite comfort food is Acini de Pepe…tiny round pastina, smothered in butter with a little salt. It’s what we got when we were sick as kids, and a big steaming hot bowl of it always cheers me up now, any day, not just sniffly days. 🙂
